Rice absolute (Oryza sativa)

 

Made from the pericarp (bran) of brown rice in the process of milling, this absolute is of a brown, paste-like consistency. Differing susbstantially from other cereal extracts (eg. barley or wheat bran), the smell is quite surprising, with oaty, cereal aspects as well as a distinct papery sweetness. Contains interesting traces not easily available in isolated commercial form such as 2-acetyl-1-pyrroline (main aroma compound of bread crust), Butane 2,3 Diol (buttery, creamy), Calamenene (hops), etc
