Acetoin acetate is the slightly more fruity and vibrant cousin of acetoin, the classic buttery compound widely used in perfumery and flavour for many decades. 

 

What it sacrifices in pure buttery gluttony, it gains in a slight fruity caramelised and fresh quality which makes it perfect for fruits like raspberry and strawberry, as well as fleshy things like melons and pumpkins and basically any gourmand where you want a little bit of lift and a different direction from pure vanilla, for example. 

 

The inclusion of buttery notes in fruits is not prima facie obvious, but it's actually crucial to many fruits. Try for example a strawberry accord with and without a dash of acetoin or acetoin acetate and you'll see that what starts as a realistic fresh juicy strawberry with becomes quite a bland pineapple mishmash without.

 

The other benefit of course is that unlike acetoin and diacetyl, the acetate doesn't have the same regulatory doubts in place. Please see the butterscotch dione product for more information on that controversy ;)
