Like Diethyl Tartrate, Levulinates are another forgotten class of aromachemical. Deriving their name from Levulose (an old name for Fructose), they tend to be sweet and a lil fruity. Ethyl Levulinate is versatile and unobtrusive, I reach for it in most fruity compositions (eg. apples and pears, berries) as well as to increase the fruity component of musks like Helvetolide.
