Caramel notes in perfumery can be tricky with the stock set of (ethyl) maltol, maple lactone/furanone and vanilla materials. Homofuraneol was a bit of a godsend in this regard, actually conferring burnt sugar aspects. Caramel pentadione turns this up, moving from mobile gooey caramel to brittle sugary shards.
