When you smell this you may wonder where it's been all your life, its humid green presence hauntingly perfect for pumpkin but also melon, caramel and even "fresh" leather accords.
Where cis-3-hexenol can sometimes come off as brash or fleeting, the pyruvate offers a greener, spicier, and more caramelic profile—its warmth and subtle complexity making it a natural fit for heavier fragrances according to its manufacturer (Bedoukian). It also lingers, offering a longevity and smoothness.
Arctander has mixed feels about it, suggesing only "imitation (or reconstructed) Celery flavor" as a good usage, but imo if you look beyond the vegetable patch much beauty involving this material is to be found.
