Almond, but roasty. Bready, but toasty. Furfural, well…mostly. This material has been enjoyed by a lot of you - especially in the US. Here we present a particularly nice quality of it, useful in gourmand notes but also wherever you might use benzaldehyde (eg. cherry). Free of the extreme restrictions imposed on furfural (justified imo) this molecule prevails in the Patissier's pallette.
